Keshari-shrikhand

Shrikhand – a sweet dish from Maharashtra but famous across the nation. Well when it’s a nation of sweet lovers there is always something sweet cooking on festivals. Shrikhand is one of such sweet dishes which is popular and occasionally prepared for almost all of religious festivals in India. The popularity of this dish has definitely made it available in retail shops which can be ready to eat. But are you thinking of making it home this time for the coming up festival? Then this blog is just the right thing for you. Read on and surprise your friends and family with this delicious Kesari Shrikhand.

Ingredients for Keshari Shrikhand
• A pinch of finest Kesar (Saffron) threads, around 6 to 8
• 1 kg Yogurt (dahi)
• 1/3 cup Sugar substitute sucralose
• ¼ cup of milk
• A small pinch of Nutmeg powder
• ¼ teaspoon Green cardamom powder
• Peeled and crushed 6 to 7 Almonds

Method to make Keshari Shrikhand
The method is really interesting for this dish. Take 1 kg Yogurt and tie add it in a piece of muslin. Tie the muslin and hang it overnight over a bowl, in a refrigerator, to drain. This will help the thickness of the dish. Next day you will find the drained yogurt. Add it in a bowl. Add the sugar substitute sucralose and mix it well.

Add saffron threads in 1/4 cup of warm milk. This helps in bringing out the flavor of saffron. Keep the threads in the warm milk for 20 minutes. This boosts saffron threads to give out maximum flavor. The threads can keep giving out flavor for as long as 12 hours after this process. Now add the saffron flavored milk along with the threads in it to the yogurt and sugar mixture in the bowl. Add the nutmeg powder and cardamom powder to this mixture and mix all these ingredients well. The better these are mixed the more effect can be seen in the final dish.Chill this mixture in refrigerator as the Shrikhand tastes best when it is well refrigerated.

Serve this chilled and garnish with crushed almonds for best taste.
